The cellar holds a high technological facilities and equipment which enables a keen and strict quality of control as well as a deep research for the evolution of our wines. Additionally, it allows the elaboration of white and red wines in a separately way. The process starts in a receiving bin with two stainless steel worm gears.
A first analytical
control is carried out before proceeding with the stalking (glucometric
degree, ph, total acidity , index of total polyphenols….) Fermentation occurs with controlled temperature in stainless steel tanks with cooling system. All these arises from a central panel which shots automatically thermal regulation. The wines mature in American and French oaks barrel giving their superior tasting notes. |
