ELABORATION
The grapes were harvested at the end of September. The grape juice or must, along with the skins underwent fermentation for 26 days in stainless steel, self-emptying vats at a temperature of 28ºC. The malolactic fermentation was completed after the devatting process and was then transferred to large French Allier oak barrels, in which they aged for one year. Using egg albumin, it was then transferred to bottles following clarification as to continue the oak ageing process in the cave for another 2 years.

TASTING NOTES
It is a very ripe cherry red with brick red hues. It has a medium-high layer. An elegant and intense bouquet blends toast and high roast aromas. There are touches of coffee and cocoa with a balsamic undertone, that is the product of a long process of ageing in French oak barrels. It is a very personal yet ripe scent.
It is a wine of great body in the mouth and tannins well settled by ageing. It is a rounded and convincing wine, with volume and an aftertaste with a long finish that is delicate and elegant.

F & W PAIRING
A pleasure with grilled or barbecued red meat, baked pork, big game (venison, boar), small game (hare, rabbit, partridge), blue fish in seasoned sauces, savoury vegetable dishes (fresh spinach, watercress, Swiss chard), vegetable stews; blue cured and heavy cheeses.
